Soup’s On


I love soup…the high fat, cream based kind. Every time I’m in Publix I pick up a carton of a specialty soup or bisque, read the nutritional info, and promptly replace the container on the shelf. I wish I liked healthy, low-fat, high fiber veggie soup. Well, now I do.

I was surfing the Weight Watchers site. A member posted a recipe she named “Zero Point Veggie Soup with FLAVOR and BULK!” It was as if she’d written me a love letter. I made a batch a few days ago. It didn’t look too good (probably because I didn’t think I liked veggie soup) so I put it in the fridge. I got brave and tried a cup today. I LOVED it. I’m beginning to get tired of taking salads to work so this will be my go-to lunch during the cool fall months.

I don’t think the recipe is copyrighted so I thought I’d share it with you. If I later discover I violated copyright law or recipe theft, I’ll remove the recipe and try to post a link to it on the WW site.

Ingredients

  • 34 oz fat-free beef broth (I bought low sodium)
  • 4 oz can tomato sauce
  • 2 beef bullion cubes
  • 2 bay leaves
  • 2 cups packaged coleslaw mix (shredded cabbage and carrots)
  • 2 cloves garlic (I used the kind in a jar)
  • 2 Tbs basil, finely chopped
  • 1 tsp dried oregano
  • 1 1/2 Kroger Meal-Ready Sides Vegetables, Stir-Fry (chopped to bite sized pieces)
  • 16 oz diced tomatoes with green chilies in tomato juice

Instructions according to author

Use a dutch oven or large pot. Spray the pot with Pam or similar. Sautee the stir-fry veggies and garlic until tender. Add the remaining ingredients. Bring to a boil, then reduce heat and simmer for 20-30 minutes. Add salt and pepper to taste.  If  you like spice, consider adding chipotle powder, hot sauce, or something else with kick. Remove bay leaves before serving.

Instructions according to Pam

Dump all ingredients in pot. Bring to boil then simmer 20-30 minutes. Remove bay leaves and dig in. This will keep well in the fridge for a few days.

Note: removal of bay leaves is very important. Otherwise, you risk having your husband swallow and choke on a bay leaf. This can be particularly traumatic when you are a newlywed trying to impress your in-laws with dinner. Twenty-six years of marriage will not erase the memory.
